Cilantro Fish Taco Bowl

Servings: 2

Ingredients

1 tsp + 1 tbsp avocado oil
1 tbsp garlic, minced
3 cups cauliflower, riced
1 tsp lime juice
1/3 cup cilantro, roughly chopped
2 filets tilapia (4 oz each)
1 tbsp seafood seasoning
1 cup red cabbage, shredded
1 cup carrots, shredded
4 tbsp Good Foods™ Creamy Cilantro Dip

To taste:

Lime juice
Salt
Pepper
Jalapeno

Instructions

Rice: Heat 1 tsp oil in a large skillet on medium-low heat. Add garlic and cook 1-2 minutes. Add cauliflower rice and cook 4-5 minutes, stirring occasionally. Mix in cilantro and lime juice; salt and pepper to taste.

Fish: Coat tilapia in seafood seasoning. Heat large skillet on medium heat, coating with remaining oil. Add tilapia, cook for 3 minutes then flip and cook another 2-3 minutes.

Assembly: Divide cauliflower rice, tilapia, cabbage, carrots into two bowls. Top each bowl with creamy cilantro dip. Add jalapenos, lime wedges, salt and pepper to taste.
