
Cilantro Lime Chicken Salad

Cook Time: 20 minutes
Ingredients:
- 2 chicken breasts
- ½ cup Good Foods Avocado Salsa
- Seasoning mixture: ½ tsp each chili powder, ground cumin, onion powder and 1/8 tsp cayenne pepper
- 1 head romaine lettuce, chopped
- 1 Roma tomato, diced
- 1 cup sweet corn, charred
- 1 cup black beans, drained and rinsed
- 1 avocado, diced
- 4 Tbsp Good Foods Cilantro dip (as dressing)
- Toppings: shredded cheddar cheese, Sante Fe flavored tortilla strips, fresh cilantro, juice of a lime wedge
Directions:
- Place chicken in a resealable bag or container. Add ½ cup Good Foods Avocado Salsa and seal. Place in refrigerator to marinate for at least 30 minutes; ideally 2 hours (up to overnight).
- Preheat oven to 450°. Line a baking sheet with aluminum foil and coat with cooking spray.
- Remove chicken from marinade and place on baking sheet. Top with remaining marinade if any. Sprinkle with seasoning mixture of chili powder, cumin, onion powder and cayenne.
- Roast for 20 minutes or until chicken reaches an internal temperature of 170°. Bake time will vary depending on thickness of chicken breast.
- Slice or dice chicken.
- Assemble salad, dividing ingredients in half to fill two bowls.
