Grilled Shrimp Skewers

Grilled Shrimp Skewers with Good Foods Chunky Guacamole.

● 1 lemon, juiced
● 3 tbsp olive oil, divided
● 1 tsp garlic powder
● 2 tsp salt, divided
● 1 tsp pepper, divided
● 1 lb large shrimp, peeled and deveined
● 1 medium zucchini, sliced 1-inch-thick
● 1 pint cherry tomatoes
● 1 red onion, cut into 1-inch chunks
● 4 cups cooked long-grain white rice
● 1 pkg Good Foods Chunky Guacamole


1. Combine lemon juice, 2 tablespoons of olive oil, garlic powder, 1 teaspoon of salt and 1/2 teaspoon of pepper in a medium bowl. Place shrimp in a large resealable plastic bag and cover with lemon juice mixture. Seal and refrigerate at least 30 minutes.

2. Meanwhile, combine zucchini, cherry tomatoes, red onion, remaining olive oil, salt, and pepper in a large bowl and toss to coat.

3. Preheat grill or grill pan over medium-high heat. Thread shrimp, zucchini, cherry tomatoes, and red onion onto skewers, alternating ingredients evenly.

4. Grill skewers, turning occasionally until lightly charred and internal temperature of shrimp reaches 145°F, about 6-8 minutes. Remove from grill and set aside.

5. Divide rice evenly among serving plates and top with skewers. Dollop skewers with Good Foods Chunky Guacamole and serve.
