Zucchini Fritters with Tzatziki Dip

Ingredients
- 2 zucchinis, ends trimmed and grated
- 1 tsp salt
- 1 large egg
- 1 tsp fresh thyme, minced
- ½ tsp lemon zest
- 1 tsp fresh basil, minced
- 3 green onions, minced
- 1 tsp fresh oregano, minced
- ½ cup flour
- 1 tsp salt
- ¼ tsp pepper
- ½ cup extra virgin olive oil

Instructions
- Grate zucchini into a large bowl. Sprinkle with salt and set aside for 10 minutes in order for the zucchini to release water. Using a towel, squeeze excess water out of zucchini.
- Whisk the egg in a large bowl. Add egg to zucchini, then add thyme, lemon zest, basil, green onion, oregano, flour, salt and pepper. Stir to combine.
- Heat the oil in a large skillet over medium high heat until oil is hot.
- Using a large scoop or spoon, slowly add heaping tablespoons of batter into the hot oil. Flatten slightly with the back of the spoon. Cook until brown, about 4-6 minutes, flipping over half way through cooking.
- Transfer to a paper towel lined plate to absorb the grease.
- Sprinkle with salt and repeat until all fritters are cooked. Allow to cool.
