Zucchini Fritters with Tzatziki Dip

Ingredients

  • 2 zucchinis, ends trimmed and grated
  • 1 tsp salt
  • 1 large egg
  • 1 tsp fresh thyme, minced
  • ½ tsp lemon zest
  • 1 tsp fresh basil, minced
  • 3 green onions, minced
  • 1 tsp fresh oregano, minced
  • ½ cup flour
  • 1 tsp salt
  •  ¼ tsp pepper
  • ½ cup extra virgin olive oil
  • Good Foods™ Tzatziki Dip for dipping

Instructions

  1. Grate zucchini into a large bowl. Sprinkle with salt and set aside for 10 minutes in order for the zucchini to release water. Using a towel, squeeze excess water out of zucchini.
  2. Whisk the egg in a large bowl. Add egg to zucchini, then add thyme, lemon zest, basil, green onion, oregano, flour, salt and pepper. Stir to combine.
  3. Heat the oil in a large skillet over medium high heat until oil is hot.
  4. Using a large scoop or spoon, slowly add heaping tablespoons of batter into the hot oil. Flatten slightly with the back of the spoon. Cook until brown, about 4-6 minutes, flipping over half way through cooking.
  5. Transfer to a paper towel lined plate to absorb the grease.
  6. Sprinkle with salt and repeat until all fritters are cooked. Allow to cool.
  7. Enjoy by dipping in Good Foods™ Tzatziki Dip.
