Pesto Shrimp Pasta Salad with Sundried Tomatoes
- 12oz box of pasta
- 8oz Good Foods Avocado Pesto Dip
- 1 lb shrimp
- 1 Tbsp oil
- 1/2 cup sundried tomatoes, chopped
- 2 cloves garlic
- Salt and pepper to taste
- Cook one 12oz box of pasta according to directions.
- In a separate pan, heat 1 Tbsp of olive oil and saute garlic and shrimp for 2 minutes.
- Combine pasta, avocado pesto, shrimp and sundried tomatoes.
- Add salt and pepper to taste. Enjoy!
