Pesto Shrimp Pasta Salad with Sundried Tomatoes


  • 12oz box of pasta
  • 8oz Good Foods Avocado Pesto Dip
  • 1 lb shrimp
  • 1 Tbsp oil
  • 1/2 cup sundried tomatoes, chopped
  • 2 cloves garlic
  • Salt and pepper to taste


  1. Cook one 12oz box of pasta according to directions.
  2. In a separate pan, heat 1 Tbsp of olive oil and saute garlic and shrimp for 2 minutes.
  3. Combine pasta, avocado pesto, shrimp and sundried tomatoes.
  4. Add salt and pepper to taste. Enjoy!
