Guac & Cilantro Tacos

Servings: 24 mini tacos

Prep time: 20 minutes

Cook time: 30 minutes

 

Ingredients:

Homemade Taco Seasoning:

  • 1 tbsp chili powder
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • ¼ tsp red pepper flakes
  • ¼ tsp dried oregano
  • ½ tsp paprika
  • 1 ½ tsp ground cumin
  • 1 tsp sea salt
  • 1 tsp black pepper

Directions:

 

Ground Beef:

  1. Heat a large skillet over medium-high heat.
  2. Add ground beef using a wooden spoon to crumble. Cook and stir until the beef is completely browned, 7-10 minutes.
  3. Drain and discard any excess grease.
  4. Return ground beef to skillet and add seasoning and water; stir to combine.

Taco Shells:

  1. Preheat oven to 375°.
  2. Turn a muffin tin upside down and spray with non-stick cooking spray.
  3. Warm tortillas in microwave for 5-10 seconds to make them pliable.
  4. Place tortillas between cups on pan to create a taco shape.
  5. Bake for 8-10 minutes until the tortillas are golden brown and crisp.
  6. Remove from oven and allow to cool on rack; repeat baking with additional tortillas.

Top taco shells with seasoned ground beef, chunky guacamole, cilantro dip and diced tomatoes.

 

Heather Penn’s Traditional Margarita Recipe: 

  • Use Tajin seasoning to salt the rim
  • 2oz Tequila Blanco or Resparado
  • 1 oz Grand Mariner
  • Top off with lime or lemon sparkling water
  • Garnish with an orange slice
  • 1 and 1/2 fresh squeezed limes
