Ingredients

  • 4 cups vegetable oil, for frying

  • 4 corn tortillas

  • 2 tsp salt, divided

  • 1 tbsp olive oil

  • 4 large eggs

  • 1/2 tsp pepper

  • 1 cup refried beans, warmed

  • 1 cup crumbled cotija cheese

  • 1 cup pico de gallo, homemade or store-bought

  • 1 pkg Good Foods Chunky Guacamole

  • Chopped fresh cilantro, for garnish

Directions

  • Preheat oven to 375°F. Heat vegetable oil in a large shallow pan over medium-high heat. Add tortillas and fry until crisp and lightly golden-brown, about 1-2 minutes per side. Remove and drain on a paper-towel-lined plate. Season each tostada with salt. Repeat with remaining tortillas.
  • Heat oil in a skillet over medium heat. Add eggs, and season with remaining salt and pepper. Fry to desired doneness.
  • Top each tostada evenly with refried beans, cheese, pico de gallo, fried egg and Good Foods Chunky Guacamole. Garnish with cilantro and serve.
