Buddha Bowl with Chunky Guacamole

1 (12-oz) bag cauliflower florets
2 large, sweet potatoes, cut into 1/2-inch pieces
Kosher salt and freshly ground black pepper, to taste
1 (9-oz) bag shredded romaine lettuce
1 pt grape tomatoes
1 (15-oz) can fire-roasted corn, drained
1 cup jarred sliced roasted red peppers, drained
2 tbsp chopped fresh parsley
Directions
- Preheat oven to 400°F. Toss cauliflower, potatoes and oil together on rimmed baking sheet until coated. Season with salt and pepper, to taste. Bake, flipping vegetables halfway through, until tender and light golden-brown, about 15-20 minutes.
- Divide lettuce among serving bowls. Top with roasted vegetables, tomatoes, corn, peppers and Good Foods Chunky Traditional Guacamole. Top with parsley, and serve.
