Ingredients

  • 2 tbsp olive oil, divided

  • 1 (20-oz) container fresh zucchini noodles

  • Kosher salt and freshly ground black pepper, to taste

  • 2 chicken breasts, boneless, skinless, fully cooked and cut into 1/2-inch pieces

  • 1 pkg Good Foods Plant Based Tzatziki Style Dip

  • 1 pint cherry tomatoes, halved

  • 1 cup halved kalamata olives

  • 1/2 small red onion, thinly sliced

  • 2 lemons, juiced

Directions

  • Heat oil in a large skillet over medium-high heat. Add noodles and cook, stirring frequently, until tender, about 1-2 minutes. Season with salt and pepper, to taste.
  • In a large bowl, combine zucchini noodles, cooked chicken, Good Foods Plant Based Tzatziki Style Dip, tomatoes, olives, red onion and lemon juice and toss to coat. Serve and
    enjoy.
