Dill Pickle Potato Salad

Ingredients

  • 2 lb Yukon Gold potatoes, peeled and diced into ½-inch pieces

  • 1 pkg Good Foods Dill Pickle Chip Dip

  • 1/2 cup diced dill pickles

  • 2 tbsp chopped fresh dill, plus more for garnish

  • 2 tbsp Dijon mustard

  • 1 tbsp apple cider vinegar

  • 1 tsp salt

  • 1/2 tsp pepper

Directions

  • Place diced potatoes in a pot of cold water and salt to taste. Bring to a boil and cook until potatoes are fork-tender, about 10-15 minutes. Drain and rinse under cold water to stop the cooking process.
  • Combine Good Foods Dill Pickle Chip Dip, diced pickles, chopped fresh dill, mustard, apple cider vinegar, salt and pepper in a large bowl. Mix to combine.
  • Add potatoes to dressing mixture and toss to coat. Cover and refrigerate at least 1-2 hours or overnight to allow flavors to develop.
  • Garnish with additional fresh dill and serve.
