2 lb Yukon Gold potatoes, peeled and diced into ½-inch pieces
1/2 cup diced dill pickles
2 tbsp chopped fresh dill, plus more for garnish
2 tbsp Dijon mustard
1 tbsp apple cider vinegar
1 tsp salt
1/2 tsp pepper
Directions
- Place diced potatoes in a pot of cold water and salt to taste. Bring to a boil and cook until potatoes are fork-tender, about 10-15 minutes. Drain and rinse under cold water to stop the cooking process.
- Combine Good Foods Dill Pickle Chip Dip, diced pickles, chopped fresh dill, mustard, apple cider vinegar, salt and pepper in a large bowl. Mix to combine.
- Add potatoes to dressing mixture and toss to coat. Cover and refrigerate at least 1-2 hours or overnight to allow flavors to develop.
- Garnish with additional fresh dill and serve.
