Greek Quinoa Salad

Ingredients

  • ½ red onion, sliced thinly

  • ½ cup Kalamata olives, sliced

  • ½ cup cherry tomatoes, quartered

  • ½ cup cucumber, skin on, sliced and quartered

  • 1 cup quinoa, cooked

  • 1 head butter lettuce (or chopped romaine)

  • Good Foods Tzatziki Dip

  • Fresh mint, chopped

  • Lemon, wedged

Directions

  • Combine red onion, Kalamata olives, cherry tomatoes and cucumber in a medium sized bowl. Add cooked quinoa and stir to combine.
  • Assemble salad by placing a butter leaf on plate, top with quinoa mixture, drizzle with Good Foods Tzatziki Dip, sprinkle with mint and add a squeeze of
    lemon. Enjoy!
