½ red onion, sliced thinly
½ cup Kalamata olives, sliced
½ cup cherry tomatoes, quartered
½ cup cucumber, skin on, sliced and quartered
1 cup quinoa, cooked
1 head butter lettuce (or chopped romaine)
Fresh mint, chopped
Lemon, wedged
Directions
- Combine red onion, Kalamata olives, cherry tomatoes and cucumber in a medium sized bowl. Add cooked quinoa and stir to combine.
- Assemble salad by placing a butter leaf on plate, top with quinoa mixture, drizzle with Good Foods Tzatziki Dip, sprinkle with mint and add a squeeze of
lemon. Enjoy!
