High-Protein Sausage and Egg Bites

1 tbsp olive oil
1 pound ground breakfast sausage
9 large eggs
3 tbsp whole milk
2 tsp salt
1/4 tsp pepper
3/4 cup shredded Mexican-blend cheese
3/4 cup frozen chopped baby spinach, thawed and drained
3 pkg Good Foods Chunky Traditional Guacamole, for serving
Directions
- Heat the oil in a large, straight-sided skillet over medium heat. Add sausage and cook, breaking up into large crumbles with a wooden spoon as it cooks. Cook for about 8 minutes, until sausage is cooked through and begins to brown. Remove from the heat and drain any excess grease.
- Preheat oven to 350°F. Coat a 12-cup muffi n tin with nonstick cooking spray. Beat the eggs, milk, salt and pepper together in a large bowl with whisk until no egg whites remain. Mix in sausage, cheese and spinach until combined.
- Divide egg mixture evenly among muffi n cups, fi lling almost completely full. Bake until the muffi ns are set and fi rm, about 20-25 minutes. Serve with Good Foods Chunky Traditional Guacamole and enjoy.
- Tip: Freeze the egg bites in a single layer on a baking sheet until solid, then transfer them to a resealable plastic bag or airtight container. Keep frozen for up to 3 months. To reheat, simply thaw overnight in the refrigerator before reheating in the microwave or oven until warm.
