Huevos Rancheros

Huevos Rancheros with Good Foods Chunky Guacamole.

● 4 cups vegetable oil, for frying
● 4 corn tortillas
● 2 tsp salt, divided
● 1 tbsp olive oil
● 4 large eggs
● 1/2 tsp pepper
● 1 cup refried beans, warmed
● 1 cup crumbled cotija cheese
● 1 cup pico de gallo, homemade or store-bought
● 1 pkg Good Foods Chunky Guacamole
● Chopped fresh cilantro, for garnish


1. Preheat oven to 375°F. Heat vegetable oil in a large shallow pan over medium-high heat. Add tortillas and fry until crisp and lightly golden-brown, about 1-2 minutes per side. Remove and drain on a paper-towel-lined plate. Season each tostada with salt. Repeat with remaining tortillas.

2. Heat oil in a skillet over medium heat. Add eggs, and season with remaining salt and pepper. Fry to desired doneness.

3. Top each tostada evenly with refried beans, cheese, pico de gallo, fried egg and Good Foods Chunky Guacamole. Garnish with cilantro and serve.
