Lamb Souvlaki Skewers

Ingredients

  • 1/4 cup olive oil

  • 3 cloves garlic, minced

  • 1 tsp dried oregano

  • 1 tsp dried thyme

  • 1 tsp smoked paprika

  • 1 tsp salt

  • 1/2 tsp pepper

  • 1 lb. boneless leg of lamb, cut into 1-inch cubes

  • Pita breads, warmed

  • 1 large plum tomato, diced

  • 1/2 small red onion, diced

  • 1/2 cup pitted kalamata olives

  • 1 pkg Good Foods Feta Cucumber Dip

  • Chopped fresh dill, for garnish

Directions

  • Soak wooden skewers in a shallow dish covered with water for at least 30 minutes.
  • Meanwhile, combine olive oil, garlic, oregano, thyme, paprika, salt and pepper in a large bowl. Add lamb and toss to coat. Cover with plastic wrap, and refrigerate for at least 30 minutes, or up to 2 hours.
  • Preheat grill or grill pan over medium-high heat. Thread marinated lamb onto skewers and grill, turning occasionally, until lightly charred and an internal temperature of 145° F is reached, about 8-10 minutes.
  • Serve skewers with warmed pita breads, tomato, red onion, olives and Good Foods Feta Cucumber Dip. Garnish with dill and serve.
