Refried Bean Breakfast Tacos

Ingredients

  • 1 (15-oz) can refried beans

  • 6 large eggs

  • 1 teaspoon salt

  • ½ teaspoon pepper

  • 1 cup shredded cheese, such as cheddar or Monterey Jack

  • 8 (6-inch) flour tortillas

  • 1 pkg Good Foods Chunky Guacamole

  • 1 (10-oz) pkg pico de gallo

  • Chopped fresh cilantro, for garnish

Directions

  • Heat refried beans in a saucepan over medium-low heat, stirring occasionally, until warmed through, about 3-4 minutes. Cover and keep warm on the stove over low heat.
  • Heat butter in a skillet over medium heat. Whisk eggs, salt and pepper in a small bowl until combined. Add eggs to skillet, stirring occasionally, until eggs are cooked to desired doneness, about 1-2 minutes. Remove from heat and top evenly with cheese.
  • Place tortillas on a plate covered with a damp paper towel. Microwave until warmed through, about 30 seconds.
  • Onto each tortilla, evenly spread refried beans and cheesy eggs. Top with Good Foods Chunky Guacamole and pico de gallo. Garnish with cilantro and serve.

Notes

  • Tip: Easily substitute your favorite cheese for cheddar or Monterey Jack cheese!
