1 (15-oz) can refried beans
6 large eggs
1 teaspoon salt
½ teaspoon pepper
1 cup shredded cheese, such as cheddar or Monterey Jack
8 (6-inch) flour tortillas
1 (10-oz) pkg pico de gallo
Chopped fresh cilantro, for garnish
Directions
- Heat refried beans in a saucepan over medium-low heat, stirring occasionally, until warmed through, about 3-4 minutes. Cover and keep warm on the stove over low heat.
- Heat butter in a skillet over medium heat. Whisk eggs, salt and pepper in a small bowl until combined. Add eggs to skillet, stirring occasionally, until eggs are cooked to desired doneness, about 1-2 minutes. Remove from heat and top evenly with cheese.
- Place tortillas on a plate covered with a damp paper towel. Microwave until warmed through, about 30 seconds.
- Onto each tortilla, evenly spread refried beans and cheesy eggs. Top with Good Foods Chunky Guacamole and pico de gallo. Garnish with cilantro and serve.
