Ingredients

  • 1 cup Cooked chicken breast, chopped finely

  • 1/2 cup Black beans, drained

  • 1/2 cup Corn, canned or frozen 

  • 1 tbsp Olive oil

  • 1/2 Green bell pepper, finely diced 

  • 1 tsp Kosher salt 

  • Fresh cracked black pepper

  • 1 tsp Cumin

  • 1/2 tsp Chili powder

  • 1/2 tsp Garlic powder

  • 1/2 tsp Onion powder

  • 1/2cup Shredded cheddar cheese

  • 1 package Egg roll wrappers 

  • Cooking spray

Directions

  • In a medium saute pan, heat 1 tbsp olive oil over medium high heat.
  • Add the chopped bell pepper, salt, pepper, cumin, garlic powder, and onion powder to the pan and cook until the peppers are softened.
  • In a bowl mix together the chicken, sauteed pepper, black beans, corn, and cheese.
  • Spoon into eggroll wrapper and wrap it up. Use a little bit of water at the corner to help seal the eggroll.
  • Place in the airfryer and lightly spray with cooking oil.
  • Cook in the airfryer at 350F for 12-14 min or until golden brown and crispy on the outside.
  • Serve with Good Foods Avocado Salsa and Chunky Guacamole.
