Spinach and Artichoke Penne Pasta Salad

Ingredients

  • 1 lb penne pasta

  • 2 cups roughly chopped baby spinach

  • 1 (12-oz) jar marinated artichokes hearts quartered, drained and roughly chopped

  • 1 cup shredded Parmesan cheese

  • 2 pkg Good Foods Spinach Artichoke Parmesan Dairy Dip

  • 1 large red bell pepper, chopped

  • Salt and pepper, to taste

Directions

  • Bring a large pot of salted water to boil over high heat. Cook pasta according to package directions. Drain pasta and rinse with cold water. Set aside.
  • Combine drained pasta, spinach, artichoke, Parmesan, Good Foods Spinach Artichoke Parmesan Dairy Dip and bell pepper together in a large bowl and toss to coat. Season with salt and pepper, to taste. Store refrigerated in an airtight container until ready to serve.
