For The Monte Cristo:
  1. Spread about 2 tablespoons of spinach artichoke dip on one side of each bread slice.
  2. Layer each sandwich with 1 slice of Swiss or Gruyère cheese, and 4 slices of ham.
  3. Top with another slice of cheese, then place the second slice of bread on top, spinach artichoke dip side down.
  4. In a shallow dish, whisk together the eggs, milk, and a pinch of salt and pepper.
