Instructions

Cranberry Pistachio Cheese Log:
  1. Spread a piece of plastic wrap on the counter. Arrange the Cranberry Pistachio Spread in a rectangular shape in the center of the plastic wrap. Pull the plastic tight around the dip to create a cylindrical shape and twist the ends. Place in the freezer for overnight or for at least 12 hours, until solid.
  2. After the log is frozen solid, remove from the freezer and let thaw for 20 minutes while you prep the coating.
  3. In a food processor, pulse the cranberries and pistachios for 15-20 seconds, until combined.
  4. Spread a piece of parchment paper on the counter. Arrange the pistachio mixture on the parchment, in a rectangular shape that is slightly larger than the log.
  5. Transfer the frozen log onto the cranberry pistachio mixture and use the parchment to roll the log over the mixture.
  6. Place the log back in the freezer for 1 hour to solidify.
  7. When ready to serve, let thaw 10 minutes. Drizzle with honey if desired. Serve with crackers of choice.
