Chicken, Spinach and Artichoke Sweet Potato Boats

Instructions

For The Sweet Potato Boats:
  1. Preheat oven to 400°F and line a baking sheet with aluminum foil.
  2. Prick potatoes with fork and rub with olive oil. Season with salt.
  3. Bake until potatoes are tender, and fork inserted easily comes out, about 45-50 minutes.
  4. Slice potatoes in half lengthwise, and fluff flesh with a fork creating a well in the center for the filling.
  5. Meanwhile, mix Good Foods Spinach Artichoke Parmesan Dairy Dip, chicken and spinach together in a large bowl.
  6. Place halved potatoes, cut-side-up, on baking sheet. Top each potato evenly with chicken mixture and cheese.
  7. Bake until cheese is melted and chicken mixture is hot, about 8-10 minutes.
  8. Garnish with parsley and serve.
