Instructions
Cranberry Pistachio Cheese Log:
- Spread a piece of plastic wrap on the counter. Arrange the Cranberry Pistachio Spread in a rectangular shape in the center of the plastic wrap. Pull the plastic tight around the dip to create a cylindrical shape and twist the ends. Place in the freezer for overnight or for at least 12 hours, until solid.
- After the log is frozen solid, remove from the freezer and let thaw for 20 minutes while you prep the coating.
- In a food processor, pulse the cranberries and pistachios for 15-20 seconds, until combined.
- Spread a piece of parchment paper on the counter. Arrange the pistachio mixture on the parchment, in a rectangular shape that is slightly larger than the log.
- Transfer the frozen log onto the cranberry pistachio mixture and use the parchment to roll the log over the mixture.
- Place the log back in the freezer for 1 hour to solidify.
- When ready to serve, let thaw 10 minutes. Drizzle with honey if desired. Serve with crackers of choice.
