Huevos Rancheros

Instructions
For Huevos Rancheros:
- Preheat oven to 375°F.
- Heat vegetable oil in a large shallow pan over medium-high heat. Add tortillas and fry until crisp and lightly golden-brown, about 1-2 minutes per side.
- Remove and drain on a paper-towel-lined plate. Season each tostada with salt. Repeat with remaining tortillas.
- Heat oil in a skillet over medium heat. Add eggs, and season with remaining salt and pepper. Fry to desired doneness.
- Top each tostada evenly with refried beans, cheese, pico de gallo, fried egg and Good Foods Chunky Guacamole.
- Garnish with cilantro and serve.
