Buddha Bowl with Chunky Guacamole

Instructions
For The Buddha Bowl:
- Preheat oven to 400°F.
- Toss cauliflower, potatoes and oil together on rimmed baking sheet until coated. Season with salt and pepper, to taste.
- Bake, flipping vegetables halfway through, until tender and light golden-brown, about 15-20 minutes.
- Divide lettuce among serving bowls.
- Top with roasted vegetables, tomatoes, corn, peppers and Good Foods Chunky Traditional Guacamole.
- Top with parsley, and serve.
- Enjoy!
