Instructions

Marinate The Shrimp:
  1. Combine lemon juice, 2 tablespoons of olive oil, garlic powder, 1 teaspoon of salt and 1/2 teaspoon of pepper in a medium bowl.
  2. Place shrimp in a large resealable plastic bag and cover with lemon juice mixture.
  3. Seal and refrigerate at least 30 minutes.
Assemble The Skewers:
  1. Combine zucchini, cherry tomatoes, red onion, remaining olive oil, salt, and pepper in a large bowl and toss to coat.
  2. Preheat grill or grill pan over medium-high heat.
  3. Thread shrimp, zucchini, cherry tomatoes, and red onion onto skewers, alternating ingredients evenly.
Grill And Serve:
  1. Grill skewers, turning occasionally until lightly charred and internal temperature of shrimp reaches 145°F, about 6-8 minutes.
  2. Remove from grill and set aside.
  3. Divide rice evenly among serving plates and top with skewers.
  4. Dollop skewers with Good Foods Chunky Guacamole and serve.
