Grilled Shrimp Skewers

Instructions
Marinate The Shrimp:
- Combine lemon juice, 2 tablespoons of olive oil, garlic powder, 1 teaspoon of salt and 1/2 teaspoon of pepper in a medium bowl.
- Place shrimp in a large resealable plastic bag and cover with lemon juice mixture.
- Seal and refrigerate at least 30 minutes.
Assemble The Skewers:
- Combine zucchini, cherry tomatoes, red onion, remaining olive oil, salt, and pepper in a large bowl and toss to coat.
- Preheat grill or grill pan over medium-high heat.
- Thread shrimp, zucchini, cherry tomatoes, and red onion onto skewers, alternating ingredients evenly.
Grill And Serve:
- Grill skewers, turning occasionally until lightly charred and internal temperature of shrimp reaches 145°F, about 6-8 minutes.
- Remove from grill and set aside.
- Divide rice evenly among serving plates and top with skewers.
- Dollop skewers with Good Foods Chunky Guacamole and serve.
