Instructions
For The Egg Bites:
- Heat the oil in a large, straight-sided skillet over medium heat. Add sausage and cook, breaking up into large crumbles with a wooden spoon as it cooks.
- Cook for about 8 minutes, until sausage is cooked through and begins to brown. Remove from the heat and drain any excess grease.
- Preheat oven to 350°F. Coat a 12-cup muffin tin with nonstick cooking spray.
- Beat the eggs, milk, salt and pepper together in a large bowl with whisk until no egg whites remain.
- Mix in sausage, cheese and spinach until combined.
- Divide egg mixture evenly among muffin cups, filling almost completely full.
- Bake until the muffins are set and firm, about 20-25 minutes.
