Mini Mexican Pizzas
These Mini Mexican Pizzas are a fun, crispy twist on taco night! Layered with refried beans, seasoned ground beef, and plenty of melty cheddar, they’re baked on small tortillas and finished with fresh lettuce, tomatoes, crema, and Good Foods Chunky Guacamole. Ready in just 20 minutes and serves 4.

Instructions
Mini Mexican Pizzas:
- Preheat oven to 400°F and line 2 rimmed baking sheets with parchment paper. Heat oil in a large skillet over medium-high heat. Add ground beef and cook, breaking up into small crumbles with a wooden spoon as it cooks. Cook for about 8 minutes, until beef is cooked through and begins to brown. Stir in taco seasoning. Set aside.
- Place 4 tortillas on each prepared baking sheet. Bake until tortillas are light golden-brown around the edges and slightly crisp, about 5-6 minutes.
- Spread refried beans evenly over 4 baked tortillas, leaving a 1/4-inch border. Top with ground beef mixture and half the cheese, leaving a 1/4-inch border. Top evenly with remaining tortillas. Sprinkle evenly with remaining cheese.
- Bake until cheese is melted, about 4-6 minutes. Top pizzas with lettuce and tomatoes. Drizzle with crema and dollop with Good Foods Chunky Guacamole. Serve and enjoy.
