Ingredients
4 cups vegetable oil, for frying
4 corn tortillas
2 tsp salt, divided
1 tbsp olive oil
4 large eggs
1/2 tsp pepper
1 cup refried beans, warmed
1 cup crumbled cotija cheese
1 cup pico de gallo, homemade or store-bought
Chopped fresh cilantro, for garnish
Directions
- Preheat oven to 375°F. Heat vegetable oil in a large shallow pan over medium-high heat. Add tortillas and fry until crisp and lightly golden-brown, about 1-2 minutes per side. Remove and drain on a paper-towel-lined plate. Season each tostada with salt. Repeat with remaining tortillas.
- Heat oil in a skillet over medium heat. Add eggs, and season with remaining salt and pepper. Fry to desired doneness.
- Top each tostada evenly with refried beans, cheese, pico de gallo, fried egg and Good Foods Chunky Guacamole. Garnish with cilantro and serve.
