Green Goddess Grain Bowl

Instructions

Green Goddess Grain Bowl:
  1. Preheat oven to 450°F and line a rimmed baking sheet with parchment paper. Toss potatoes and oil together on prepared baking sheet. Season with salt and pepper, to taste. Bake, fl ipping potatoes halfway through, until tender and golden-brown, about 30-35 minutes.
  2. Combine kale and remaining oil in large bowl. Season with salt and pepper, to taste, and massage kale until tender.
  3. Divide rice evenly among serving bowls. Top evenly with chicken, sweet potatoes, kale, cabbage, tomatoes, cucumbers, avocado and goat cheese. Dollop with Good Foods Avocado Green Goddess Dip & Spread, and serve.

    • 2 medium sweet potatoes, cut into 3/4-inch cubes
    • 1 tbsp olive oil, divided
    • Salt and pepper, to taste
    • 4 cups cooked brown rice

    • 2 cups kale, stemmed, roughly chopped
