Instructions

For The Egg Bites:
  1. Heat the oil in a large, straight-sided skillet over medium heat. Add sausage and cook, breaking up into large crumbles with a wooden spoon as it cooks.
  2. Cook for about 8 minutes, until sausage is cooked through and begins to brown. Remove from the heat and drain any excess grease.
  3. Preheat oven to 350°F. Coat a 12-cup muffin tin with nonstick cooking spray.
  4. Beat the eggs, milk, salt and pepper together in a large bowl with whisk until no egg whites remain.
  5. Mix in sausage, cheese and spinach until combined.
  6. Divide egg mixture evenly among muffin cups, filling almost completely full.
  7. Bake until the muffins are set and firm, about 20-25 minutes.
