Ingredients

  • 1 lemon, juiced

  • 3 tbsp olive oil, divided

  • 1 tsp garlic powder

  • 2 tsp salt, divided

  • 1 tsp pepper, divided

  • 1 lb. large shrimp, peeled and deveined

  • 1 medium zucchini, sliced 1-inch-thick

  • 1-pint cherry tomatoes

  • 1 red onion, cut into 1-inch chunks

  • 4 cups cooked long-grain white rice

  • 1 pkg Good Foods Chunky Guacamole

Directions

  • Combine lemon juice, 2 tablespoons of olive oil, garlic powder, 1 teaspoon of salt and 1/2 teaspoon of pepper in a medium bowl. Place shrimp in a large resealable plastic bag and cover with lemon juice mixture. Seal and refrigerate at least 30 minutes.
  • Meanwhile, combine zucchini, cherry tomatoes, red onion, remaining olive oil, salt, and pepper in a large bowl and toss to coat.
  • Preheat grill or grill pan over medium-high heat. Thread shrimp, zucchini, cherry tomatoes, and red onion onto skewers, alternating ingredients evenly.
  • Grill skewers, turning occasionally until lightly charred and internal temperature of shrimp reaches 145°F, about 6-8 minutes. Remove from grill and set aside.
  • Divide rice evenly among serving plates and top with skewers. Dollop skewers with Good Foods Chunky Guacamole and serve.
