3 tbsp olive oil, divided
1 tsp garlic powder
2 tsp salt, divided
1 tsp pepper, divided
1 lb. large shrimp, peeled and deveined
1 medium zucchini, sliced 1-inch-thick
1-pint cherry tomatoes
1 red onion, cut into 1-inch chunks
4 cups cooked long-grain white rice
Directions
- Combine lemon juice, 2 tablespoons of olive oil, garlic powder, 1 teaspoon of salt and 1/2 teaspoon of pepper in a medium bowl. Place shrimp in a large resealable plastic bag and cover with lemon juice mixture. Seal and refrigerate at least 30 minutes.
- Meanwhile, combine zucchini, cherry tomatoes, red onion, remaining olive oil, salt, and pepper in a large bowl and toss to coat.
- Preheat grill or grill pan over medium-high heat. Thread shrimp, zucchini, cherry tomatoes, and red onion onto skewers, alternating ingredients evenly.
