Instructions
Spicy Mediterranean Bowl:
- Prep the base: Add the rice, couscous, or quinoa to the bottom of a bowl.
- Add the greens: Layer a handful of arugula or mixed greens on one side.
- Add the chicken: Slice grilled chicken and arrange it neatly over the base.
- Layer the veggies: Add sliced cucumbers, cherry tomatoes, jalapeños, and pickled onions around the bowl.
- Top with feta: Sprinkle generously with crumbled feta cheese.
